Even though most people think of peanut butter sandwiches first, peanut butter is actually a very versatile food that can be used in many dishes from savory soups to smoothies to breakfast pancakes.

All it takes to make peanut butter is ground roasted peanuts. It takes 540 peanuts to make a 12 ounce jar of peanut butter! Typically, sugar and salt are added for taste. Store bought versions may also contain preservatives for freshness. Some grocery stores give you the option to ground your own fresh peanut butter. Or, you can make your own peanut butter at home with a food processor.

For cancer patients, peanut butter is a helpful food to have on hand. Peanut butter adds extra protein and calories to dishes for patients struggling with weight loss. Since most peanut butters don’t need to be refrigerated, peanut butter also makes for an easy, safe portable snack on treatment days. Peanut butter is also budget friendly, which never hurts!

Note: Peanut butter can be high in sugar so if you are watching your sugar intake be sure to check the amount of sugar in your peanut butter or switch to a natural peanut butter with no sugar.

Creamy vs. Crunchy

Do you prefer creamy or crunchy peanut butter? This is an ongoing debate! According to the National Peanut Board, women tend to prefer creamy and men tend to prefer crunchy. Also, people on the East Coast choose creamy while the West Coast likes crunchy. Usually, creamy vs. crunchy is just a matter of personal taste, but if you are having difficulty swallowing from cancer treatment, choose creamy peanut butter. If your healthcare team recommends a low-fiber diet, you should avoid crunchy.

Try other nut butters. Almond butter and cashew butter are also tasty and can be substituted for peanut butter in most dishes. You may just find a new favorite! Did you know that Nutella is also a nut butter? It’s ground hazelnuts and cocoa powder for the chocolate taste.
